Instructions

  1. Place the ricotta, salt, and pepper in a food processor.

  2. With the motor running, slowly drizzle in the olive oil. Scrape down the slides as you process until you get a creamy and fluffy consistency.

  3. Taste and adjust with more salt or pepper. Store for up to 1 week in the fridge.

  • 1 1/2 cups
    Whole-milk ricotta cheese
  • 1/2 teaspoon
    Kosher salt
  • Freshly ground black pepper (about 20 cranks)
  • 1/4 cup
    Extra-virgin olive oil (I used California Olive Ranch XVOO)
