Cheddar Waffles

After I tried these I was hooked! They have a light crunch on the outside and a soft chew on the inside. So delicious and perfectly cheesy with a hint of sweetness. Dare I say better than regular waffles?

Instructions

  1. Preheat the oven to 200°F and start heating your waffle maker.

  2. In a large bowl, whisk together flour, sugar, salt, and baking powder. set aside. 

  3. In a medium bowl, whisk together egg yolks, milk, and butter. Set aside.
  4. In a medium bowl, use an electric mixer to whisk the egg whites until they have soft peaks.
  5. Add the wet ingredients into the dry and mix until just combined. Do not over mix. Now, add in egg whites, cheese, and chives and fold until combined.
  6. Pour the batter into your hot waffle iron, try not to overfill, and cook for about 5 minutes until they are golden brown.
  7. Once cooked, place waffles directly on the oven rack and let them sit for a few minutes. This allows steam to escape and makes them perfectly crispy. Repeat with your remaining waffles and dig in!
