Lemonade Ricotta Pancakes

Lemon ricotta pancakes are my #1, top, best-tasting, ultra-moist, most favorite pancakes ever. Instructions

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk together. 
  2. In a separate medium bowl, combine the milk, ricotta, egg, vanilla, and Florida's Natural® Lemonade. Whisk well and pour into your dry ingredient bowl. Mix just until all ingredients are combined. Tip: The more you mix, the denser your pancakes will be. Try not to over mix to keep them fluffy!  
  3. Heat a large skillet over medium heat. Butter your pan and then, working in batches, pour your pancakes into your skillet. Try not to overcrowd, so they cook evenly and are easier to flip. Flip once the start to bubble and the bottoms are brown.
  4. Repeat with the remaining batter and serve warm with fresh fruit, butter, or syrup. Optional: Create a lemon icing by combining powdered sugar and Florida's Natural® Lemonade. Drizzle on top of pancakes. Enjoy!

    ricotta

    powder sugar
  • 4-5 tablespoons
