Lemonade Ricotta Pancakes

Lemon ricotta pancakes are my #1, top, best-tasting, ultra-moist, most favorite pancakes ever. This recipe is a welcome twist on the classic because it uses Florida’s Natural® Lemonade. As you gear up for the summer with refreshing Florida’s Natural Lemonades stocked in your fridge, try adding some to your next batch of pancakes for a subtle and irresistible lemon flavor. It’s not just the delicious flavor that makes this lemonade great. Florida’s Natural Lemonades are made from real ingredients, using real cane sugar without any high fructose corn syrup.

Simple Tasty Recipes


  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk together. 
  2. In a separate medium bowl, combine the milk, ricotta, egg, vanilla, and Florida's Natural® Lemonade. Whisk well and pour into your dry ingredient bowl. Mix just until all ingredients are combined. Tip: The more you mix, the denser your pancakes will be. Try not to over mix to keep them fluffy!  
  3. Heat a large skillet over medium heat. Butter your pan and then, working in batches, pour your pancakes into your skillet. Try not to overcrowd, so they cook evenly and are easier to flip. Flip once the start to bubble and the bottoms are brown.
  4. Repeat with the remaining batter and serve warm with fresh fruit, butter, or syrup. Optional: Create a lemon icing by combining powdered sugar and Florida's Natural® Lemonade. Drizzle on top of pancakes. Enjoy!
