Smooth Homemade Queso Dip

This queso dip is so flavorful and is smooth both fresh out the pot and right out of the fridge. Seriously, it's like magic. This is a 10/10, 5 star, highly recommend recipe.

Instructions

  1. To a medium bowl, add cheeses and cornstarch. Mix to coat evenly. 

  2. To a pot or large pan on medium-high heat, add butter, onion, and garlic. Cook until onion is translucent, about 3-4 minutes. Add tomatoes and cook until soft, 2-3 minutes.

  3. Pour in evaporated milk and cheeses. Stir to combine.

  4. Add in all the spices and green chilies.

  5. Stir until the cheese melts and becomes smooth. Add in the cilantro and sausage.

  6. Stir in 1 tablespoon of milk at a time until the queso reaches the desired consistency. Keep in mind, it will become thicker as it cools.

  7. Serve warm with chips! :) Also delicious straight out of the fridge the next day!


Ingredients for 2.5 cups

  • 1.5 cups (125 g)
    cheddar cheese, freshly shredded
  • 1 cup (100 g)
    pepper Jack cheese, freshly shredded
  • 1 tbsp
    cornstarch
  • 1/2 tablespoon
    butter
  • 2-3 cloves
    garlic, minced
  • 1/4 cup
    white onion, finely chopped
  • 1 can (13 oz)
    evaporated milk (not low fat)
  • 1
    tomato, finely diced (I used Roma)
  • 1/4 teaspoon
    garlic powder
  • 1/4 teaspoon
    onion powder
  • 1/4 teaspoon
    ground cumin
  • 4 oz.
    chopped green chilies, fire-roasted
  • 1/4 cup
    cilantro, finely chopped
  • 2 tablespoons
    milk (any kind)
  • 8 oz.
    sausage, cooked
  • Salt (to taste)
